Marinading meat serves two different functions: as a tenderiser and as a flavour enhancer. While the cooking process itself turns connective tissues into gelatine to varying degrees, marinading assists to bring it to a palatable range of tenderness.

Marinading is an important field of use for CARNAD products. Today, most marinading in the food industry is done with artificial additives or chemicals, for all practical purposes. The natural fond products from CARNAD can fully substitute such artificial additives in a marinading process. The fond is made entirely from natural meat bones and is, therefore, a 100% natural ingredient.
