Meaty bones are received from selected suppliers in plastic containers transported by food-approved refrigerated trucks. All raw materials undergo a critical quality control according to our own rigorous QA and HACCP systems.
The raw materials are taken to our chilled storage room (max. 4ºC) for production preparation. After inspection, the containers are emptied into our Reaction Tanks via a lift system. Large bone material will be reduced in size before further processing.
In the Reaction Tanks, a unique enzymation process is employed to extract the protein from the meaty bones. The process yields three basic products: protein base soup, fat, and residue material. The proportion and composition of these products vary according to the raw material used.
A mechanical separation process is employed to separate the residue without creating emulsions.
Separation and polishing of the products are done by a by a centrifugal process before the products are transported to holding tanks.
The protein soup is reduced to the finished product according to customer specification in a special Evaporator Unit.
Each batch has salt added to achieve the final recipe according to customer specifications.
The finished products are packed according to customer specifications. The products can be supplied in tanks as full truck loads, or packed in individual containers of various types as required.
